Winter Immunity Tonic

Got the sniffles - or want to get on the front foot to prevent them this winter? Give this delicious tonic a try.

INGREDIENTS

1 thumb-size piece of fresh tumeric, peeled and roughly sliced

1 thumb-size piece of ginger, peeled and roughly sliced

1 cinnamon stick

1 fresh bay leaf

juice from half a lemon

1.5 ltrs water

2 Tbs honey

Method

PREP TIME - 5 minutes

COOKING TIME - 20 minutes

MAKES - 1.5 litres

1. Place all ingredients, except the honey, into a saucepan and simmer over a medium heat for 20 minutes

2. Stir through the honey at the end of 20 minutes. Add extra to taste. Serve hot or cold.

Note - the reason the honey is added at the end is because the longer the honey is exposed to high temperatures for, the less antibacterial properties it will have.

Many of the beneficial components of honey are heat sensitive - meaning they disappear when heated. Thats why we sell our honey raw (not-heat treated) as it has the highest amount of goodies in it that way!
