Batch 41 - Timberlands Eucalyptus

An autumn harvest from Colin’s hives nestled in the Timberlands area of Wanneroo. The bees foraged on the nectar of a variety of native species throughout later summer into autumn, primarily Eucalyptus including the tall Tuart, Jarrah and Lemon scented gum trees.

This combination has resulted in a mild, honey that’s not too sweet but has warm woody and buttery tones. I have been really enjoying this batch on fresh sourdough, the slight tartness of the bread compliments the smooth tones in the honey perfectly. Give it a try!
