Batch 43 - Eucalypt Spring Bloom

This batch was harvested the very first week of spring, from hives up near the coastal town of Dongara, North of Perth. The bees spent most of autumn and winter South in Dwellingup enjoying the Eucalyptus flowers of the native Redgum and Bullich trees. Moving in late winter up to Dongara to fill up on the nectar of the spring wildflowers. The resulting honey has a unique dark treacle flavour with floral undertones. It is beautiful used with apple cider vinegar as a tonic, or to dress simple salads.
